Easy Salted Caramel Cheesecake

You saw the dripping caramel and you just couldn’t resist, right?

We are kindred spirits.

Do you have those foods that you always associate with your mom?

Maybe it was a dessert that you always shared with her or a treat she always brought you home from grocery shopping?

For me, its anything caramel.

The easiest salted caramel cheesecake you will ever make! Delicious homemade caramel, caramel mousse and a sprinkle of salt on top.

I think the love affair with this sweet treat began when my mom started placing caramel eggs in my Easter baskets.  I loved biting into each milk chocolate shell and having the caramel drip down my chin.

Since then we’ve graduated to caramel macchiatos, chocolate caramel bars and of course, anything salted caramel.

Which brings me to this beauty:

My mom and I will be in Boston together this Mother’s Day for my cousin’s wedding and unfortunately, I won’t be able to bring this on the plane or get it to her before then.

To compensate for that, I described it her layer by layer over the phone the other night.  

I thought I was being a good daughter.  You know, showing how much I was thinking of her this Mother’s Day and letting her know I did have a present. However, I think it just became a form of torture.

However, I think it just became a form of torture.

She now wants to know when she gets her cake.  Who can blame her, right? 

As cheesecakes go, this one is fairly easy to create since I use a Sara Lee cheesecake as a base and made a mousse out of Cool Whip.  I kept the remaining cool whip in the fridge and can save it to use anytime in the next two weeks.

Sara Lee frozen desserts and Cool Whip Whipped Topping deliver a winning recipe to bring loved ones to the table. I found both of these at my neighborhood Walmart.
